From rich sweet moments to dark bitter seductions, they all soothe and comfort like no other. Most products named 'chocolate' contain a mass of other, not so healthy, ingredients but pure cocoa has plenty of positive health benefits, the obvious one being that it makes us happy!

A not so healthy, real winter comfort food, based on the English bread and butter pudding - layers of bread drizzled with butter, soaked in a mixture of eggs, sugar, cream and cocoa, layered with chocolate shavings and oven baked in a bain-marie. It comes out springy, pudding - like and oozing melted chocolate.

Short pastry made with 400g plain flour, 75g caster sugar, 180ml olive oil, 2 tablespoons warm water. Chill. Filling made with 250ml double cream, 150g caster sugar, 6 egg yolks, 200ml sweetened condensed milk, 100g dark chocolate (70% cocoa, melted), 2 tablespoons 100% pure cocoa powder. Bake in a preheated oven (190 degrees C) for about 35 minutes.

Each year this traditional Andalucian sweetmeat made with almonds is sold in great quantities at Christmas time. There are lots of different varieties, we make two using almonds from our organic crop. This one is an extrafino organic chocolate turrón blando suprema, to wear this label the turrón must contain at least 60% almonds.

Vegan chocolate pot

100g cooked white beans, 70g dark chocolate (70% cocoa), 45ml syrup (your choice), 45ml almond or soya milk, 5 soft prunes (pitted), 2 tablespoons pure 100% cocoa powder. Melt chocolate, combine all ingredients in a processor and blend until extremely smooth. Pass the paste through a conical sieve to remove any remaining prune pieces, spoon into glasses or cups.
